Cajun Baked Chicken and Chips

Perfect for a midweek budget meal, our Cajun baked chicken and chips is much loved by the whole family giving you a meal you can throw together and let it bake away in the oven. If you can get it (which you can in most large supermarkets) then use a ready mixed cajun spice otherwise you’ll need to start putting together cumin, paprika, coriander, pepper and whatever else.

  • Ingredients

    900g Chicken Wings Approximately
    700g Large Potatoes Cut into Chips
    1tbsp Cajun Seasoning
    2tbsp Vegetable Oil
    1 Lime
    Salt
    Black Pepper
    Green Salad For Serving

How to Cook

1. Get your oven preheated to 200C/Gas Mark 6.

2. In a bowl, mix together your cajun seasoning, vegetable oil and the juice and zest of your lime.

3. Grab a large bowl (you may need to do this in batches) and mix your potatoes and chicken wings with your cajun coating ensuring everything gets a decent coating. You could use a pastry brush to get it into the dips of the wings.

4. Line a large baking tray with foil and scatter in your potatoes followed by your chicken wings. Season with plenty of salt and a little black pepper and bake in the oven for 20 minutes.

5. After 20 minutes, give it all a toss and bake for another 20 minutes or so until the chicken and wings are brown and on the verge of looking burnt.

6. Serve up with your green salad and of course a little dollop of ketchup (optional).

    Have you got a recipe for homemade cajun seasoning instead of buying it ready made?

    It depends on your taste preferences but generally speaking 2tsp of paprika followed by 1tsp of cayenne pepper, onion powder, oregano, thyme and garlic powder will get you started. You can of course start playing around with the combination for example try adding some dried chilli.

    You’re welcome. Must admit adding a little pinch of dried chilli flakes is a must for me but all comes down to how much heat you want.
