Chocolate Guinness Cake - Fiver Feeds

Chocolate Guinness Cake

… Or rather, chocolate cake for grown-ups. This is rich, dark and indulgent, but at the same time remains rather easy and cheap to prepare. There are so many chocolate cake recipes out there, but this is perhaps one for all those dark chocolate fans, the sort of people who do genuinely love all that 70% cocoa plain chocolate. But don’t forget, to counteract all that darkness you can always serve it with some double cream or top it with cream cheese frosting. The fact that this recipe serves 6 and comes in at 66p a portion isn’t worrying at all. Not in the slightest…

  • Ingredients

250g Unsalted Butter at Room Temperature
    150g Caster Sugar
    150g Dark Brown Sugar
    100g Plain Chocolate
    2 Eggs Beaten
    1tsp Vanilla Extract
    200ml Guinness
    275g Plain Flour
    35g Cocoa Powder
    2tsp Bicarbonate of Soda

How to Cook

1. Heat your oven to Gas Mark 4/180C and grease a Springform cake tin, or two if you want to make a sandwich cake with filling.

2. Break up the chocolate and put in a heatproof bowl over a pan of simmering water. Gently melt then remove from the heat.

3. Using an electric mixer or a wooden spoon if preparing by hand, beat the butter and sugar together until light and fluffy. Stir through the melted chocolate and then thee eggs and vanilla bit by bit.

4. Gradually whisk in the Guinness until you have a smooth batter.

5. Sift the flour, cocoa powder and bicarbonate of soda together then fold this into the batter until combined. Spoon into the cake tin and bake for approximately 40 minutes, or until a skewer comes out clean.

6. Dust with icing sugar at the end if you have any because we all know icing sugar makes cakes look a whole lot better…
