Coconut Milk Rice Pudding

And now for something completely different… Rice pudding with a difference, to be more specific. We can’t imagine there are too many of you who haven’t fallen for the heady aromas of coconut milk in your cooking, and now here’s an easy, sweet recipe which makes use of it in a delicious way. We’ve added mango slices and lime juice as a garnish, but our Coconut Milk Rice Pudding is equally tasty on its own.


Coconut Milk Rice Pudding

  • Ingredients

    150g Pudding Rice
    400ml Tin Coconut Milk
    100g Caster Sugar
    225ml Whole Milk
    ½tsp Ground Cinnamon
    1 Mango Sliced or Cut into Chunks
    Juice and Zest of 1 Lime

How to Cook

1. Heat your oven to 150C/Gas Mark 2.

2. Combine the rice, coconut milk, sugar, milk and cinnamon in a large pan and bring to the boil. Stir until the sugar has dissolved and then transfer to a baking dish and cover with a lid or foil.

3. Bake in the oven for approximately 45 minutes or until the rice is cooked.

4. Whilst you are waiting, prepare the mango and toss the pieces in the lime juice.

5. Put the rice pudding into a bowl and then arrange the mango on top. Finely sprinkle over a little of the lime zest just to make it look pretty

Spruce it Up

If you really want to push the boat out a little more then think about mixing up the top a little more. Try adding a little sprinkling of crushed walnuts to add another texture to the dish or change the fruit to another tropical alternative such as pineapple.
