Curried Cauliflower Soup

Simple, healthy, flavoursome – what more could you want from a meal? Cooking something from scratch doesn’t have to be left until the weekend as this is perfect as a warming mid-week supper served with your favourite fresh bread on the side. If you want it even healthier, dispense with the cream at the end.


Curried Cauliflower Soup

  • Ingredients

    30g Unsalted Butter
    1 Onion Finely Chopped
    1 Leek Thinly Sliced
    1-2tsp Curry Powder Adjust to Suit your Tastes
    1.5l Vegetable or Chicken Stock Made Using 2-3 Stock Cubes
    1 Cauliflower Head Broken into Small Florets
    1tbsp Thick Double Cream
    Black Pepper

How to Cook

1. Melt the butter in a large stock pot and fry the onion and leek over a medium heat with a little salt and pepper until they are soft and almost cooked through.

2. Stir in the curry powder and cook for a further minute.

3. Add the cauliflower florets and coat in the spicy onions and leeks before pouring in the stock. Bring to the boil and simmer for 10 minutes or until the cauliflower is cooked through.

4. Remove from the heat and blitz until smooth using a hand blender. Stir through the cream and bring back to the boil.

5. Add further seasoning if required before serving.
