Ginger Beef Stir Fry

  • Ingredients

    500g Beef Strips
    2 Garlic Cloves Crushed
    1 Thumb-Sized Piece of Ginger Peeled
    Juice from ½ a Lime
    2tbsp Runny Honey
    2tbsp Soy sauce
    1tbsp Fish Sauce
    1 Red Chilli
    300g Stir Veg Mix

How to Cook

1. To make the marinade, peel and grate half the ginger then combine with the soy sauce, honey, garlic, lime juice and fish sauce. Leave for a minimum of 30 minutes.

2. Slice the remaining ginger and the red chilli into thin strips. Heat some oil in a wok or large frying pan and cook for 1 minute on a high heat. Remove from the pan and keep to one side.

3. Once the beef has been in the marinade for long enough, remove the strips, keeping the marinade to one side. Fry the beef in the pan on a very high heat for 2 minutes, then add the ginger and chilli. Mix together, then add the stir fry vegetables and cook everything for another minute.

4. Pour in the marinade and heat through, then serve with rice or noodles.
