Halloumi Stuffed Peppers

A great vegetarian dish if you fancy something rather eye catching on your plate, this can also be cooked on the barbeque if you’re feeling summery. To stay in budget we’ve kept the additional ingredients to a minimum, but feel free to add any other Mediterranean and North African-inspired flavours to your couscous filling.


Halloumi Stuffed Peppers

  • Ingredients

    4 Large Red Peppers
    50g Couscous
    100ml Vegetable Stock
    1 Red Onion Finely Chopped
    250g Halloumi Cut into Small Cubes
    25g Fresh Parsley Finely Chopped
    Salt and Black Pepper

How to Cook

1. Heat your oven to 200C/Gas Mark 6. Cut the peppers in half and scoop out the insides and the seeds. Place on a baking tray and cook for about 20 minutes or until softened.

2. Make up the vegetable stock and pour over the couscous in a large bowl. Leave for 5 minutes, or until the stock has been absorbed. Separate and fluff up the couscous using a fork.

3. Add the halloumi, red onion, parsley and seasoning to the couscous.

4. Fill the pepper halves with the couscous and return to the oven for a further 15 minutes and then enjoy! 

Spruce it Up

Not a fan of halloumi? Then make it the same but top with a cheese that’ll melt for those last 15mins whether that’s a sprinkling of parmesan or cheddar.
