Hot Cross Bun and Butter Pudding

One for the Easter left overs when your Hot Cross Buns are going a little beyond their best but it works just as well with fruit loaf at any other time of year. This is basically a lazy person’s bread and butter pudding because the buns do most of the hard word for you. However, we’ve still added a touch more spice, just in case they’re not pulling their weight so for one of the tastiest yet simplest of puds, try our Hot Cross Bun and Butter Pudding

Hot Cross Bun and Butter Pudding

  • Ingredients

    8 x Hot Cross Buns/Thick Slices of Fruit Loaf
    50g Unsalted Butter
    300ml Double Cream
    500ml Whole Milk
    4 Eggs
    100g Caster Sugar
    1tsp Vanilla Extract
    ½tsp Freshly Grated Nutmeg
    1tsp Ground Cinnamon

How to Cook

1. Heat your oven to 150C/Gas Mark 3, then butter a large oven proof dish.

2. Slice your buns and then cut each half into two triangles. Generously butter each piece and line the dish with them. Dust with the grated nutmeg and cinnamon.

3. Whisk together the eggs, sugar and vanilla then combine this with the cream and milk.

4. Pour this onto the hot cross bun slices making sure they are evenly covered. Leave to soak for 15-20 minutes.

5. Bake for 50 minutes and serve with custard or ice cream whilst still hot. Yes… It’s done!
