2tbsp Olive Oil
2 Garlic Cloves Crushed
300g Prawns Defrosted
300g Cherry Tomatoes Halved or Quartered
1 Red Chilli Sliced (Optional)
Half a Bunch of Fresh Parsley Chopped
300g Spaghetti
Salt
Black Pepper
This is a very loose interpretation of the Italian classic, Spaghetti alle Vongole. That traditional dish is made with fresh clams and mixed seafood, but unfortunately our budget does not stretch to such ingredients. Instead, we’ve used prawns (with the price based on frozen ones), but you could also try the frozen pre-prepared packs of mixed seafood.

300g Spaghetti

1. Get a saucepan of salted water onto boil and cooking the spaghetti according to the packet instructions.
2. Heat the oil in a large frying pan and fry the garlic for half a minute before adding the prawns, chilli if using and some salt and pepper. Cook for a couple of minutes.
3. Put the tomatoes in the pan and add more seasoning if required. Toss everything together until the tomatoes are heated through and starting to go soft.
4. Once the spaghetti is cooked, drain and toss in with the tomatoes and prawns. Add the chopped parsley just before serving.
