Lemon and Garlic Chicken

This is perhaps the easiest marinade in the world to prepare and works just as well with pork. We’ve used chicken thighs and drumsticks here, but you can use whatever joints you prefer – breast, wings, even the whole chicken. And continuing with the free-and-easy theme, serve with your own choice of sides – salad, coleslaw, couscous, chips, warm potato salad. The list really is endless…


Lemon and Garlic Chicken

  • Ingredients

    700g Chicken Thigh and Leg Joints
    3tbsp Olive Oil
    1tbsp of Juice and the Zest from 1 Lemon
    2 Garlic Cloves Crushed
    Leaves from a Small Bunch of Fresh Thyme Sprigs
    Black Pepper

How to Cook

1. Heat your oven to 200C/Gas Mark 6 (you can also cook these on the barbeque if you’d prefer).

2. Score the chicken skin with a sharp knife, then combine the rest of the ingredients in a separate bowl and stir well. Season to taste with salt and pepper.

3. Pour the marinade over the chicken, making sure all the pieces are coated.

4. Cover and put in the fridge for at least 20 minutes, preferably a couple of hours.

5. Transfer to a roasting tin and cook in the oven for 25-30 minutes, or until crispy on the outside and cooked all the way through.
