Lentil and Mixed Herb Salad

This one would work as either a side salad, a filling lunch or even a refreshing dinner on a hot day. If you want to add some additional ingredients, you could opt for chopped anchovies, roasted red peppers, sundried tomatoes or crumbled feta cheese – the choice is yours!


Lentil and Mixed Herb Salad

  • Ingredients

    250g Bag of Fresh French Beans
    400g Tin of Green Lentils Drained and Rinsed
    Leaves from a Few Sprigs of Fresh Parsley, Chives and Coriander Finely Chopped
    1 Small Red Onion Finely Chopped
    2tbsp of Extra Virgin Olive Oil
    1tbsp of Balsamic Vinegar
    1tsp of Dijon Mustard
    Salt and Black Pepper

How to Cook

1. Heat up a pan of salted water. Cut the French beans in half and blanch in the water for 2 minutes. Drain and leave to one side.

2. To make the dressing, combine the olive oil, balsamic vinegar and mustard with some salt and pepper to taste.

3. Mix together the lentils, beans, fresh herbs and red onion, then pour the dressing over them and gently stir so everything is covered.
