  • Ingredients

    1 Dry Ciabatta Loaf (Preferably a Couple of Days Old) Cut into Chunks
    6tbsp Extra Virgin Olive Oil
    2tbsp Red Wine Vinegar
    6 Vine Tomatoes Cut into Chunks
    ½ Cucumber Diced into Small Chunks
    1 Red Onion Finely Chopped
    Handful of Fresh Basil Leaves Roughly Chopped
    Salt and Pepper

How to Cook

1. Place the bread in a large bowl. Drizzle over the olive oil and season with salt and pepper. Toss until combined.

2. Add the remaining ingredients and gently combine. Add further seasoning if required and serve. Yes, that simple!
