With Shrove Tuesday on the horizon, we thought it was time to remind you that there is no need to go buying up the pancake mix from your local supermarket – chances are you’ve got everything you need in the cupboard and fridge already. There’s nothing wrong with sprinkling lemon and sugar on your pancakes – in fact, that’s our favourite way to serve them – but if you’re feeling slightly more adventurous, you can add maple syrup, fruit, chocolate spread, bananas, cream, ice cream… The list is endless. Heck, you can even make savoury pancakes with this recipe if you so desire. We’ve left more than enough room in the budget for you to add any extras so get experimenting…

  • Ingredients

    1-2tbsp Vegetable Oil
    100g Plain Flour Sieved
    2 Eggs
    300ml Milk
    A Pinch of Salt

How to Cook

1. Put the flour and salt in a large bowl and use a spoon to make a small dip in the centre. Break the first egg into the dip and pour in half the milk. Whisk until you form a batter.

2. Gradually add the remaining milk and keep whisking until you have a smooth batter of pouring consistency.

3. Heat a tablespoon of oil in a large non-stick frying pan. Transfer a ladle of batter into the pan then tip the pan from side to side until the batter covers the base. Fry until golden brown on one side and then flip or turn over using a large spatula – each side should take about a minute to cook. 

4. Remove from the pan and repeat until you have used all the batter (this should make about 8 pancakes) – you will probably need to add more oil to the pan at some point.
