1. Mix together the lime juice and zest, spices and 1 tablespoon of the honey then leave to one side.
2. Melt the butter and remaining honey in a large non-stick frying pan or griddle pan if you want to get some lines on your pineapple . Once bubbling, fry the pineapple on all sides until golden (you will probably need to do this in two batches due to the size of the wedges).
3. Once they start to turn golden, pour on the spiced glaze and fry for another couple of minutes (again, if cooking in two batches, use half the glaze for each). Serve with crème fraiche on the side.
