Tofu Thai Green Curry

There’s nothing quite like the spicy sweet creamy taste of a Thai curry and just because you don’t eat meat, this doesn’t mean you should miss out. You could always choose to omit the chicken, beef or prawns and just double up on the vegetables, but why not try using tofu as an alternative?

  • Ingredients

    1tbsp Vegetable Oil
    1 Red Chilli Finely Chopped
    1 Thumb-Sized Piece of Ginger Peeled and Finely Chopped
    2 Garlic Cloves Crushed
    2tbsp Thai Green Curry Paste
    400g Tin of Coconut Milk
    1 Aubergine Diced
    300g Tofu Drained and Diced
    Handful of Green Beans Cut into 1 Inch Pieces
    1tbsp Soy Sauce
    1tbsp Palm Sugar

How to Cook

1. Heat the oil in a large wok or frying pan and fry the chilli, ginger and garlic for a minute. Add the curry paste fry for a further minute until the kitchen is filled with the aromas of those incredible Thai spices.

2. Pour in the coconut milk and then fill half the empty tin with water and pour that in too. Bring to the boil then add the aubergine and beans then simmer for 10 minutes.

3. Add the tofu, soy sauce and palm sugar, then simmer for another 10 minutes or until the tofu is heated through. Serve with coconut rice on the side.
