White Chocolate Mousse

A lot of people are scared of making mousse but based on this recipe, we’re not entirely sure why. Any form of chocolate mousse is surprisingly easy to prepare – the hardest part is waiting for it to set! We’ve used raspberries as a garnish here, but if they’re out of season or difficult to get hold of, sprinkle each serving with some cocoa powder as an alternative.

  • Ingredients

    180g White Chocolate
    100ml Whole Milk
    225ml Double Cream
    2 Egg Whites
    50g Fresh Raspberries

How to Cook

1. Break the white chocolate into chunks and melt in a bowl, sitting over a pan of simmering water but not boiling. Once melted, stir in the milk until combined.

2. In separate bowls beat both the egg whites until they form stiff peaks and the double cream until it also forms soft peaks. Using an electric whisk will significantly reduce the preparation time.

3. First, gradually fold the egg whites into the melted chocolate and then repeat with the cream. Make sure you do this very gently.

4. Once combined, separate out into ramekin dishes and chill for an hour, or until set. Garnish with the fresh raspberries.
